When Americans think of Food Trucks, we usually think of a kitchen on wheels. A truck set up to enable food prep and sale of prepared meals. I haven’t noticed many, if any of that style of food truck here in France. Instead, I am amazed at the way fresh food is presented at the local farmers market. I mean if you go to the Saturday market in Puyallup, or the Procter Market in Tacoma, you will find lots of fresh produce, lots of hand crafted products, but here in France, well here they take the farmers market to a whole next level.
What amazed me about these markets is not the size, but the ways product is displayed. A Food Truck in France is nothing like the taco trucks back in America.
There was a singer performing on the street corner. Again nothing we haven’t seen before.

This tractor/trailer rig was just being opened up. The cover above the men on the right. It is an extension of the roof of the trailer. The sides of the trailer swing up to provide shelter for the wares on display and the patrons.
This trailer is the stage from which sliced meats, sausage, eggs, and cheeses are sold. The whole thing collapses down into a small trailer. Notice how the product is sheltered from the elements by a solid roof that includes lighting.
This Fishmonger explained to me that these trailers are much easier to clean than the full trucks that most vendors use. All of his product is laid out and displayed in ice. The trailer is essentially one big ice chest. Genius!
